The bar top overhang should be a minimum of 8-1/2” and could be as much as 10” so your knees do not hit the bar front. For our extra tall customers the 10” overhang maybe necessary.

A raised bar should be between 42 to 48 inches high. This will provide enough room to accommodate bar stools. For these surfaces, the standard overhang is 12 inches. Standard Overhang : Raised Bar Top.

Solid Surface countertops can overhang 6 inches without additional support (e.g. plywood decking). 3 cm Quartz (engineered stone) can handle a 14 inch overhangs and 3 cm Granite overhangs should not exceed a 10 inch overhang without additional support.
Overhangs like those found on a wall pass through, and eating bars of more than 6”, but less than 12”, can be supported with wood or metal corbels. They can also be supported by a relatively new product called a COUNTERBalance™ CounterPlate™.
A typical overhang for a comfortable seating area should be around 25-30cm (10-12”), this should leave enough knee room and adequate space between the countertop edge and the person seated. Therefore, as the depth of the overhang increases, so does the comfort and usability of the bar .

At a minimum, countertops should line up with the front of the cabinet doors. In general, there is some overhang from the cabinet base since the doors protrude from base. So, traditional countertops with some overhang looks normal. A flush countertop would make my cabinet doors and drawer faces stick out.
We have to be careful when we install upper bar tops that sit on a 5” knee wall. These overhangs have to be supported by steel braces placed under the countertop and then screwed into the wooden studs in the knee wall. Any granite countertops with more than an 8” overhang should be adequately supported by steel braces.

The NKBA guidelines recommend that each seat be 24 inches wide. But the depth, or knee space, required varies with countertop height . For a 30-inch-high island , knee depth should be 18 inches; for a 36-inch height , it should be 15 inches; and it should be 12 inches for a 42-inch-high island .
